Mardi's South West Chili

  • 1 small to medium Onion; chopped

  • 2-3 Cloves chopped garlic

  • 2 tbsp. Oil

  • 1  sliced Serrano Chile

  • 1  sliced Carrot

  • 2 sliced Bell Peppers

  • 2 tsp. Cumin

  • 2 tsp. Chili Powder

  • Salt & pepper to taste

  • 2 C. Tomato juice

  • 1 C. chopped stewed tomatoes

  • 1- 15 oz. Can Black Beans

  • Grilled Chicken or Steak (Meat can be omitted. It's really good both ways.)

  • Topping: Sour cream, shredded cheese and cilantro


Note: This is a large recipe. You will want to use the 16 cm. billy pot.


1. Add oil to fry pan. Saute onion and garlic until caramelized.

2. Add; chile, veggies, spices and salt & pepper to the garlic and onion in pan. Cook until tender.

3.Put sauce and tomatoes in billy pot. Add sauteed vegetables and black beans. Simmer until thickened.

4.Add grilled meat if desired. (Don’t add the meat until the end or it might get overcooked.)

5.Top with sour cream, cheese and cilantro. Enjoy!
